Inside out: Old cheese fam Captein, Zoeterwoude
On the edge of the Green Heart, in Zoeterwoude, the Captein family runs a cheese farm. The family has been farming for generations and there are still two generations of passion on the farm. There are chickens, sheep, pigs and cows with which they try to close cycles and all for the product they make: the farm cheese. Chef Leon Mazairac walks with the family for a day and makes a nice dish with their oldest cheese.
